Huevos Rancheros

Huevos rancheros (Ranch Eggs) is a classic Mexican breakfast dish popular throughout much of the Americas consisting of eggs served in the style of the traditional large mid-morning fare on rural farms.
The basic dish consists of fried eggs served upon lightly fried corn tortillas topped with a tomato-chili sauce. Refried beans, slices of avocado, or guacamole accompany the dish.






Ingredients for 1 person


2 corn tortillas
2 eggs
2 ripe tomatoes
1/4 onion
1/2 green pepper fry
1 teaspoon chili sauce
a pinch of salt
a pinch of garlic 
salt 
olive oil

Elaboration


Chop the onion, green pepper and tomatoes. Put everything in a pan with a little oil and fry slowly. Halfway through the cooking add the teaspoon of chili sauce, a pinch of salt and garlic salt. Stir occasionally. When in doneness that we like, we remove and reserve warm.

In another pan, put a few drops of olive oil, heat it and brown them tortillas, one by one, on both sides. The retired and reserve hot. In another pan fry the two eggs.

We will serve our huevos rancheros placing in the bottom of the dish hot tortillas. On top of each tortilla put a fried egg will that accompany with the sauce and finally decorate with a sprinkling of chopped parsley or cilantro, this last step is optional.
